Our small business is in Gracie Lane Boutiques

We are glad to announce that we now have a booth inside Gracie Lane!  Now you can pick up your Salsa Mix 7 days a week.  Gracie Lane hours of operation are
Mon - Wed 10am to 6pm
Thursday. 10am to 7pm
Friday - Sunday 10am to 6pm
Location is on Cooper across the Wal Mart just past I-20 in Arlington.  Behind Chick Fil A
Tonight there was a special "Sip n Shop" night that takes place once a month. We met a bunch of nice people and friendly vendors and we snuck in some shopping too! 😁  Free Samples were provided as well as snacks, drinks (adult and regular). 

    Ange was handing out samples of our Jalapeno Mix in Chicken Tortilla Soup.  It was a hit.   Here she is in Action.  GO ANGE GO!   

Tomorrow  and all weekend we will be at the Fort Worth Stockyards Market on Exchange and at The Shed in The Dallas Farmers Market

Watermelon Festival Dallas Farmers Market





We had a great day at the Dallas Farmers Market selling our One Two Three Salsa Mix.  Lots of happy people and a lot of FREE Watermelon!  See you next year.

A BIG Ol' Burger at Rendons General Store in Rendon, TX

I told my son Ben to get whatever he wanted on the menu and HE DID!  

Whoa buddy!  This is a big burger!
He ordered a Big Ol' Burger at Rendon's General Store Burgers and Shakes in Burleson, TX
5085 East Farm to Market Road 1187, Burleson, TX 76028

Did it taste good?  Yes, it was fine.  Would we order it again...probably not.  Stick to the regular burger.  The place was clean and the employees were friendly.

Chef Mikes 24K Spice Chicken





Heres a video of the 24K Spice Chicken.  Season ingredients include 16 Mesh Black Pepper, Kosher Salt, Paprika, Garlic, Mustard Powder, Jalapeno Powder and Cumin



Directions:

Butterfly the chicken breasts

Dry the breasts.

Coat them with oil (I used vegetable oil)

Season with Onetwothresalsa's 24K Spice (or with whatever you have....Salt, Pepper, Garlic, Paprika, Cumin, Mustard Powder, Cayenne or Jalapeno Spice)



Place on a broiling pan like I did in the video and broil on hi both sides for about 5 minutes each or until they reach about 165 degrees Fahrenheit. 


We served it with Brown Rice and an easy Cold Iceberg Lettuce and Tomato Wedge Salad. 




ANYONE CAN MAKE THEIR OWN BBQ RUB!

I've read enough BBQ cookbooks and smoked enough BBQ to know:  
 ANYONE CAN MAKE THEIR OWN BBQ RUB!

Here's a basic recipe that you can use:
2 Tbsp of paprika
1 Tbsp light brown sugar
2 tsp cayenne
1 tsp ground cinammon
2 tsp dry mustard
1 tsp garlic powder
1 tsp onion powder
1 tsp salt

Here in Texas this is the way to go:
1 part kosher salt
2 parts 16 mesh pepper (16 mesh pepper is a  coarser grind than table grind)  Regular table grind is a bit too strong for BBQ.  You can use it, just know that 16 mesh is better.
Paprika for color (optional)

A quick search in the interwebs will turn up hundreds of rubs.  You just have to try one and see if you like it.  For me Salt, Pepper and Garlic is good enough for most backyard bbq's.

Thats it!  The rest is good clean smoke and a lot of time and BBQ practice.

After many years of BBQ'n, trial and error and lots of research I finally made my own seasoning.  I I call it, Chef Mike's 24K Spice Blend.  Ingredients include Paprika, Garlic, Pepper, Jalapeno, Salt, Cumin and a bit of Accent. For the Sweet Rib and Brisket Rub version I add some light brown sugar
A little note about Accent (MSG) Some people have an aversion to Accent (Monosodium Glutamate).   I have noticed many big time rubs, seasonings, etc. have a fair share of MSG in them.   Doritos, Cheetos, Takis,  all types of chips and lots of condiments have MSG.  Why do they use it?  Because it tastes GOOD!  I say use it.  Its not necessary, but when you get a chance do side by side taste test.  The difference is noticeable.   Don't add too much as it can take over, just use enough to enhance the flavor, just like salt.

One Two Three Salsa Mix


     My wife and I own and operate a small business called One Two Three Salsa Mix. I post about it quite often on Facebook and Instagram and I want to share some photos with you.
     We started this venture about 2 years ago back in 2016. Since that time we have made many change.  With the help of lots of vendors and other nice people we have learned how and where to sell our mixes.  Currently we are at the Dallas Farmers Market and at The Fort Worth Stockyards.  In the next few months, as soon as it gets cooler and the holiday season begins we will begin selling at craft fairs, fesitivals and various events throughout Texas.  OH and last week we visited the Dallas Market Center.  The DMC hosts 4 huge events a year where buyers from all over the country come to purchase products to fill their stores.

Chef Mikes son is a cross country runner

Nothing to do with BBQ, just wanted to share some of my life experiences with y'all.   My son Martin runs cross country for Arlington High School.   I don't know where he gets this desire to run, he surely doesn't get it from me.  The only time I might run is if there was a grizzly bear chasing me and even then I would just give up after about 30 feet.  DEAD MEAT!
He ended up in about 30th place out of a whole lot of runners (you will see in the video).
The event was in Burleson and the time is about 9:30am.   It makes me proud to see him run and participating in school activities.  His mother and I are so lucky he is in great health and in great shape

Keep up the good work Martin and when you get home clean your room and pick up your clothes that are on the restroom floor.
